The Island of Kauai is often thought of as extremely wet. True it does have one of the wettest spots on earth called Mt. Waialeale, receiving over 400 inches a year, but that is not the entire truth of Kauai.
Almost round in shape, Kauai has distinct weather variations on this 522 square mile island. The famous Poipu area is to the South and has glorious beach days most of the year. Valette is a delicious new force in Healdsburg California. Located in the heart of Sonoma wine country two brothers Dustin Valette and Aaron Garzini made this dream a reality in March 2015. The menu is all about what this area has to offer on a seasonal basis, and the wine list is very impressive and well thought out (you are in Sonoma after all). Fresh Seafood Rules At Top Of The Market Restaurant In San Diego

Top Of The Market Restaurant is literally that, located above The Fish Market Seafood Restaurant, A place where locals and visitors alike go to dine and  can purchase fresh seafood. The water front location is beautiful and the Top Of The Market Restaurant (on the second floor) has commanding views of the harbor, and even better views of those San Diego sunsets. The dining area lined with teak, table settings with white linen and huge windows bring the outdoors in to you. Executive Chef Ivan Flowers and his team work in concert to serve the freshest seafood available. Although I highly recommend anything from the ocean here make no mistake, everything I tried was outstanding.

The Hyatt Regency New Orleans has two secret weapons in this food centric city. Multiple award-winning Borgne, voted one of the top eight “must try” hotel restaurants in the United States is a Spanish influenced dining experience headed up by Chef John Besh and Chef Brian Landry. The philosophy here is Louisiana fresh Gulf seafood and it does not get any better than that. The Spanish influence goes back to when Louisiana was indeed a Spanish territory. But make no mistake, the menu here also offers traditional Louisiana cuisine including but not limited to oysters, shrimp, gumbo and turtle soup spiked with sherry.  As I mentioned earlier fresh seafood is the strong suit of Borgne, on the menu you’ll find garlic clove Louisiana shrimp with tomatoes, roasted eggplant and Fregola a round pasta similar to Israeli Couscous.
