At TOTEM a traveling show of Cirque Du Soleil, this part chef, part caterer, part business manager Mia Messier is the Kitchen Manager.
Mia, a creative culinary phenom, was born in Cambodia and grew up in Montreal. An affinity for the musical arts led her to Vincent D’Indy Musical Institute of Montreal, where she studied violin and piano. Mia left music after several years to attend Quebec Tourism Institute, focusing on food and catering management. For 10 years, Mia worked catering movie sets, cooking in bistros, hotels and private kitchens and opened her own pizzeria in Montreal.

Chef Alejandro Abad has recently been named Executive Chef at Sofitel San Francisco Bay’s signature restaurant ” Bay 223. Chef Abad, a native of Barcelona began cooking at an early age preparing meals at home with his father. After 17 distinguished years in the culinary arts, he has fine-tuned his craft by training in molecular cuisine, learning about wine and working in fine dining establishments throughout Europe, including five years in Barcelona and Michelin-rated Restaurant Christophe and Restaurant Vermeer, in Holland.
His mantra is a single word: fresh. And the location here is so very conducive to “ fresh.”
